A Simple Mexican Food Recipe - One Pot Burritos and Easy Queso

Burritos are a perennial favorite, but they are a pain to make. Everyone has been to a taco bar at one time or another. Why stop there? Nachos are a big hit at every party, but they can get repetitious and boring. One pot burritos take the construction out of the preparation, and allow the diner to eat what they want.

These one pot burritos make an excellent addition to a buffet, especially outside. Let the diners get as messy as they like. Make sure you have plenty of napkins though.

What You Need:

one pound of ground turkey, browned and drained
one can of black beans
one can Ro-Tel tomatoes and chilies
one can corn, drained.
8 flour tortillas, 8 inches diameter
one cup finely chopped onion
8 large romaine lettuce leaves
shredded cheese
sour cream
hot sauce, for those brave souls
jarred salsa

How to Make It:

Place the cooked, ground turkey in the bottom of a crock pot. Add the black beans, Rotel, and drained corn. Cover and allow to cook on low for two or three hours.

When it is time to eat, cover the tortillas with a couple of damp paper towels and heat on medium in the microwave. This only takes a few seconds. Too long and the tortillas become Frisbees.

Place one romaine leave on each tortilla. Spoon some of the meat mixture over top. Let each diner prepare them to his or her own taste, by adding salsa, sour cream, and hot sauce for those brave enough.

If you are serving more than just a few, this same dish makes an excellent dip. Put the shredded cheese over the top, let cook a bit longer until the cheese melts. It is best to spoon this on to plates, even when being used as a dip, otherwise your diners will spend the entire party guarding the bowl and digging out broken chips. Serve with either tortilla chips or with flour tortillas cut into wedges (usually 4 to six per tortilla. Any smaller and they won't hold enough beans and meat)

Since you will already have the tortilla chips out for the burritos if you decide to serve it as a dip, you can also make some fun salsa and cheese dip. This is made in the microwave, and can be done at the last minute, in case some unexpected guests arrive.

What You Need:

One 28 ounce jar of pineapple or mango salsa
one pound of processed cheese food (like Velveeta)

How to Make It:

Place the salsa in a microwave safe dish. Cut the cheese into cubes. Make sure you cover the dish, otherwise the salsa will explode all over the inside of the oven. Microwave on high for one minute. Stir. Return to the microwave and heat another minute. Once the cheese is melted, serve.
